Caulirice and pork carnita bowls
Hey friend! Just as promised, I am popping in to share my recipe for the caulirice pork carnita bowls I shared on the ol instagram on Sunday.
They are really simple and Whole 30 approved.
I first started with a slow cooked pork shoulder I had left over from last week. I shredded it and added a little chili powder and cumin (I am all about the cumin lately).
I then processed a whole head of cauliflower and sautéed it with half a white onion in olive oil.
For my Sunday prep, I just divided the pork and the caulirice into my lunch bowls and left it at that. The day of, I would top with salsa, tomatoes and avocado after reheating.
It almost feels silly to type this out as a recipe it was so easy!

The mindset shift that really works for me is that simple food is better. As soon as a complicated recipe comes up that I have to keep in a notebook or binder, my shoulders raise and I know it isn't happening.
No recipe meals are my jam.
