Chicken, Quinoa and White Bean Soup
So this chicken, quinoa and white bean soup was an experimental soup that ended up being so stinking delicious that I am craving it right now, a whole three weeks later.
I'm currently in Ohio helping care for my father and my diet has consisted of a lot of fried carbs. Which is okay, I'm not afraid of a little fast food and I don't believe in the guilt that comes with it but my body is craving my home, my routine, my own comforting food.
I sometimes think after having kids I was left permanently in that nesting stage that comes with it. If there were a job that involved creating a home, it would be for me, hands down.
Anyway, this soup was a result of me craving chicken noodle soup. I'm intolerant to wheat so I haven't had a bowl in years and it's one of the things my heart misses most (and pizza, let's be honest).
So the whole point of this post is to share the recipe with you so here goes.
In a pot put:
2 cooked and shredded chicken breast
1 onion
3 carrots
3 stalks of celery
2 cloves of garlic
1 can of white beans
1/2 cup of dry quinoa
Sautéed all of this and cover with chicken stock.
Let simmer for one hour and enjoy! Go get cozy with a good book and enjoy!
